Tilapia wrap

 

My mom recently shared this tilapia wrap idea with me, and I seriously have eaten one of these every day at lunch for the past nine days. It’s a perfect lunch – some protein to get me through the day, but not too heavy, so I don’t feel like I will fall asleep when 2 o’clock rolls around! And, BONUS, it’s only 305 calories and super quick to make.

Ingredients:

1 tilapia filet – I use lightly breaded frozen filets from Costco (fresh would be more ideal, I realize, but these are so easy and quick and low-maintenance!) – 180 calories

1 small flour tortilla (or corn if you are g-free) – 90 calories

1/2 Roma tomato – Approx. 7 calories

1/4 – 1/2 c. spring mix – Approx. 3 calories (practically doesn’t even count!)

1 tsp. Kraft Spicy Ranch Dressing (or whatever dressing you like, but let me just tell you that if you buy the Kraft Spicy Ranch and don’t like it, I will judge you forever and we probably can’t be friends) – 25 calories

That’s it! Total calories: 305…Not bad at all!

Steps:

1. Heat tilapia (The kind I get takes about 20 minutes at 450)

2. Lightly toast tortilla and dice tomato.

3. Assemble wrap – I like to put the fish on one side, dressing on the other and then veggies in the middle, but this is totally up to you.  Go wild. Put the dressing right on the fish if you dare.
