This recipe is so quick and easy – perfect for last-minute guests or as a hostess gift. I think the little almonds in the middle make people think these are much fancier than they are:


2 c. flour
1 c. almonds + more for topping cookies
3/4 c. powdered sugar
1 tsp. salt
1 c. butter
2 tsp. vanilla extract
1/2 tsp. almond extract


1. Preheat oven to 350.

2. Grind up 1 c. almonds in food processor until they have a fine, meal-like texture.

3. Add other dry ingredients and pulse food processor to combine.

4. Use food processor to cut in butter, vanilla and almond extracts. Don’t over-blend. You want a fine, sand-like consistency.

5. Roll dough into a log, about 2″ in diameter.

6. Slice cookies into desired thickness (I like about 1/2″), top each with an almond and bake for about 12 minutes (will vary depending on thickness – keep an eye on em!)

That’s it! Takes less than 30 minutes!
