My dear friend Sarah and I joke sometimes about the healthy muffins we make. The joke usually happens when we are at a coffee shop lusting after the real muffins that we want to eat, but should not eat. Then we go home and make our healthy version of muffins, which (and here come the joke), we wouldn’t dare give to any other person, for fear they would spit them out immediately and run from our general vicinity.

All joking aside, healthy muffins and yummy muffins do not HAVE to be opposites, and here is my current formula that isn’t TERRIBLE. (I won’t lie to you, it’s not the most wonderful muffin in the world, either) It’s basically a modified version of the All Bran Muffin recipe:

2 1/2 c. All Bran cereal
1 1/2 c. 1% milk
2 egg whites
2/3 c. applesauce
1 tsp. salt
1 tsp. vanilla
1 tbsp. baking powder
1 tbsp. sugar (can be left out, if you’re a nihilist)
1 1/2 c. flour (white or wheat)

Mix the All Bran and milk and let sit for 10 minutes, then add the other ingredients. Bake @ 400 for about 12-15 minutes. And voila! Muffins with very little sugar and fat! Makes 12.
